CHICKEN CHIPOTLE

This is one my favourites lunches to make when I'm doing a challenge with my clients. You can cook the chicken on Sunday night and make up the salads in advanced too. Then it only takes 5 minutes at lunch to put it together. This recipe is only one serving, but I'd typically buy enough ingredients for three lunches.

INGREDIENTS

200g chicken breast
100g black beans
100g cherry tomatoes
50g baby spinach
30g low fat feta
50g sauerkraut
50g sweet corn
30g chipotle sauce

METHOD

1. Cook your chicken on a BBQ, pan fry it or do it in the over if that's your only option.

2. Put together the salad of corn, beans, sauerkraut, tomato and spinach. This can be done in advance if needs be.

3. Just before eating add the chicken, feta cheese and chipotle sauce to the salad.

I really prefer this salad when the chicken is warm. Makes it feel more like eating a burrito ;-)
