FRENCH TOAST

This is one of those meals that people just don't believe you can eat while losing weight. And while it's not the most filling brunch in the world gosh is it delicious. I could have snuck in a fourth slice of bread in but opted for Greek yogurt instead. I consider this a weekend meal.

INGREDIENTS

3 slices of thick slice white bread
2 medium eggs
50 ml of semi skimmed milk
100 g blueberries
100 g strawberries
50g plain Greek yogurt (5%)
Olive oil spray (minimal)
A little maple syrup

METHOD

1. Put a frying pan on a medium heat

2. Mix the eggs and milk together in a bowl with a fork. Add some cinnamon.

3. Spray the pan with oil, then dip each slice of break in the egg/milk mix before laying it on the pan. Make sure the break really soaks up the mix.

4. Fry for about 3 minutes until golden brown on one side, then flip and do the same on the other side. Flip it another time if needs be to get the colour you want.

5. Serve on a plate and dress with the Greek yogurt, strawberries and blueberries and a splash of maple syrup.

The think that differentiates this from standard French toast is that we've added a lot of volume, fibre and protein with the berries and yogurt. It's not filling enough to eat every day, but perfect for a bit of fun at the weekend.
