SUPERFOOD OMELETTE

Although 'superfoods' aren't really a thing this omelette has nutriment density that is off the rails. When you stick this in to Cronometer it completes your daily values for Vitamin A, B12, C, D, E, K .... which together with the volume and protein make is super filling.

INGREDIENTS

4 large Omega-3 rich eggs
50g reduced fat feta
Half a small onion
100g red pepper
100g mushrooms
100g tomatoes
50g spinach
Olive oil spray
Salt, pepper, lemon juice

METHOD

1. Put a fry pan on a medium heat

2. Chop up the onion, pepper, mushrooms and tomatoes.

3. Spray the pan with oil then add the onion to fry for two minutes. Then add the pepper, mushroom, tomato and spinach. Sautee for 5 minutes then set aside in a bowl

4. Crumble the feta and mix it together with four eggs. Clean the pan, give it a spray of oil, then add the omelette mix to the pan. Cook for 4-5 minutes.

5. As the omelette mix just starts to go solid on top check to see if it's golden brown underneath.

6. When it's ready add your veggie mix to one half of the omelette before folding the other over the top (like a big taco)

7. Serves with salt, pepper, lemon, paprika . . Whatever works for you.

This meals hits different. I designed in a phase were I was purely focussed on nutrient density. So it's really all about health this one. You can drop it back to just three eggs if you prefer.
