SWIRLED EGGS

This was my first attempt at an egg swirl!! Even though I swirled it way too late, it ended up with this cool white/yellow mottling. Topped with Bill Granger’s classic smashed avocado it tasted absolutely lush.

INGREDIENTS

10g salted butter
4 large eggs
100g avocado
A little coriander
Some chilli flakes
Juice of one lime
Salt and pepper to taste

METHOD

1. Put your four eggs in a bowl. Season to taste and give them a quick mix with a fork

2. Heat a non stick pan to a medium heat and add 10 grams of butter. Add the eggs

3. Once the eggs start to set, drag one side to the other, then swirl the cooked section around to one side. Repeat this till you have a tight swirl (mine was way too late in the video)

4. Smash the avocado, add chilli flakes, the juice of a lime and mix together.

5. Place the egg swirl on a plate and top it with the smashed avocado mix.

The swirl is all about timing. I tried it again a few days later and it was much better to try earlier rather than later. You can also do it with chop sticks. Lot’s of examples on youtube!!
